Ingredients

  • 2 cups slightly expired barley
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

Cook the barley according to package instructions.

Once cooked, drain and let it cool.

In a large bowl, combine the cooked barley, cucumber, tomato, red onion, and parsley.

In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Pour the dressing over the barley mixture and toss to combine.
