Ingredients
- 2 cups of Basmati rice
- 4 cups of water
- 2 tablespoons of vegetable oil
- 1 onion
- 2 carrots
- 1 bell pepper
- 2 cloves of garlic
- 1 tablespoon of soy sauce
- 1 teaspoon of curry powder
- Salt to taste
- Pepper to taste
Instructions
- Rinse the Basmati rice under cold water until the water runs clear.
- In a large pot, bring the water to a boil. Add the Basmati rice and cook according to the package instructions. Once cooked, spread the rice out on a flat surface to cool and dry.
- Heat the vegetable oil in a large frying pan or wok over medium heat.
- Add the onion, carrots, bell pepper, and garlic to the pan. Stir fry until the vegetables are tender.
- Add the cooled Basmati rice, soy sauce, curry powder, salt, and pepper to the pan. Stir fry for another 5 minutes until the rice is heated through and the flavors are well combined.

Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Add the diced carrot, bell pepper, and frozen peas. Cook for 5 minutes until the vegetables are slightly tender.
- Add the cumin powder, coriander powder, turmeric powder, chili powder, and salt. Stir well to coat the vegetables with the spices.
- Add the Basmati rice and vegetable broth to the skillet. Stir to combine all the ingredients.
