Ingredients
- 2 cups slightly older Basmati rice
 - 4 cups vegetable broth
 - 1 onion, diced
 - 2 carrots, diced
 - 2 celery stalks, diced
 - 2 cloves garlic, minced
 - 1 teaspoon cumin
 - 1 teaspoon turmeric
 - Salt and pepper to taste

Instructions

In a large pot, heat some oil over medium heat.

Add the diced onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.

Add the minced garlic, cumin, turmeric, salt, and pepper. Cook for another minute.

Add the vegetable broth and bring to a boil.

Stir in the slightly older Basmati rice and reduce the heat to low.

Cover and simmer for 20 minutes or until the rice is cooked and tender.
