- 2 cups stale muffin mix
- 2 cups milk
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup blueberries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the stale muffin mix, milk, sugar, eggs, and vanilla extract. Mix well until smooth.
- Gently fold in the blueberries into the mixture.
- Pour the mixture into the greased baking dish.
- Bake for 40-45 minutes or until the pudding is set and golden brown on top.
