
Pita Bread Salad
A refreshing and healthy salad made with slightly expired pita bread.

Ingredients
- 2 whole pita bread
- 2 cups mixed greens
- 1 cucumber, sliced
- 1 tomato, diced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cut the pita bread into small triangles and place them on a baking sheet.
- Bake the pita bread triangles for about 10 minutes or until crispy.
- In a large bowl, combine the mixed greens, cucumber, tomato, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to coat evenly.
- Add the crispy pita bread triangles to the salad and toss gently.
- Serve immediately and enjoy!
