
Kimchi Fried Rice
A flavorful and spicy fried rice recipe that uses expired kimchi to reduce food waste. The high heat cooking process ensures food safety.

Ingredients
- 2 cups cooked rice
- 1 cup expired kimchi
- 1/2 cup diced vegetables (carrots, peas, corn)
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 2 teaspoons soy sauce
- 1/2 teaspoon sesame oil
- 2 green onions, chopped
- 1 fried egg (optional)
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add expired kimchi and diced vegetables. Stir-fry for 2-3 minutes until the vegetables are tender.
- Add cooked rice to the pan and break up any clumps. Stir-fry for 5-6 minutes until the rice is heated through.
- Add soy sauce, sesame oil, salt, and pepper. Stir well to combine.
- Remove from heat and garnish with chopped green onions.
- Serve hot with a fried egg on top if desired.
