Ingredients
- 1 cup instant polenta
- 2 cups water
- 1 cup grated cheese
- 1/4 cup chopped fresh herbs
- 1/2 cup breadcrumbs
- 2 eggs
- Salt and pepper to taste
- Oil for frying
Instructions
- In a saucepan, bring water to a boil.
- Gradually whisk in instant polenta, reduce heat to low, and cook for 5 minutes, stirring constantly.
- Remove from heat and stir in grated cheese, chopped herbs, salt, and pepper.
- Transfer the polenta mixture to a greased baking dish and let it cool completely.
- Once cooled, shape the polenta into small balls.
- In a shallow dish, beat the eggs.
- Dip each polenta ball into the beaten eggs, then roll in breadcrumbs until fully coated.
- Heat oil in a frying pan over medium heat.
- Fry the polenta balls until golden brown and crispy on all sides.
- Remove from pan and drain excess oil on a paper towel.
- Serve hot as an appetizer or side dish.
