Ingredients

  • 1 cup instant polenta
  • 2 cups water
  • 1 cup grated cheese
  • 1/4 cup chopped fresh herbs
  • 1/2 cup breadcrumbs
  • 2 eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a saucepan, bring water to a boil.
  2. Gradually whisk in instant polenta, reduce heat to low, and cook for 5 minutes, stirring constantly.
  3. Remove from heat and stir in grated cheese, chopped herbs, salt, and pepper.
  4. Transfer the polenta mixture to a greased baking dish and let it cool completely.
  5. Once cooled, shape the polenta into small balls.
  6. In a shallow dish, beat the eggs.
  7. Dip each polenta ball into the beaten eggs, then roll in breadcrumbs until fully coated.
  8. Heat oil in a frying pan over medium heat.
  9. Fry the polenta balls until golden brown and crispy on all sides.
  10. Remove from pan and drain excess oil on a paper towel.
  11. Serve hot as an appetizer or side dish.
