
Imperial Stout Beef Stew

Ingredients
- 2 lbs beef stew meat
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and cubed
- 2 cups slightly expired Imperial Stout
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent.
- Add the carrots, potatoes, slightly expired Imperial Stout, beef broth, tomato paste, dried thyme, and dried rosemary to the pot. Stir well.
- Return the browned beef stew meat to the pot. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the meat is tender and the flavors have melded together.
- Serve the Imperial Stout Beef Stew hot, garnished with fresh herbs if desired.
