Ingredients
- 1 cup coffee beans
- 1 cucumber
- 1 red onion
- 1 tomato
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- 1. Rinse the coffee beans and cook them in boiling water for 10 minutes. Drain and let them cool.
- 2. Meanwhile, dice the cucumber, red onion, and tomato.
- 3. In a large bowl, combine the coffee beans, cucumber, red onion, and tomato.
- 4. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- 5. Pour the dressing over the salad and toss to combine.
- 6. Let the salad marinate in the refrigerator for at least 30 minutes before serving.
