Ingredients
- 4 expired frozen vegan burritos
- 1 cup salsa
- 1 can (15 oz) refried beans
- 1 cup vegan shredded cheese
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Remove the expired frozen vegan burritos from their packaging and cut them into bite-sized pieces.
- In a mixing bowl, combine the salsa, refried beans, cumin, chili powder, salt, and pepper.
- Spread a thin layer of the salsa mixture in the bottom of a baking dish.
- Place half of the burrito pieces on top of the salsa mixture.
- Sprinkle half of the vegan shredded cheese, black olives, cilantro, and red onion over the burrito layer.
- Repeat the layers with the remaining burrito pieces, salsa mixture, vegan shredded cheese, black olives, cilantro, and red onion.
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving.
- Serve the vegan burrito casserole with a side salad or your favorite toppings.
