
Vegan Burrito Casserole
Transform expired frozen vegan burritos into a comforting casserole that is both safe and tasty.
Ingredients
- 4 expired frozen vegan burritos
- 1 cup salsa
- 1 can (15 oz) refried beans
- 1 cup vegan shredded cheese
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
Instructions
Preheat the oven to 375°F (190°C).
Remove the expired frozen vegan burritos from their packaging and cut them into bite-sized pieces.
In a mixing bowl, combine the salsa, refried beans, cumin, chili powder, salt, and pepper.
Spread a thin layer of the salsa mixture in the bottom of a baking dish.
Place half of the burrito pieces on top of the salsa mixture.
Sprinkle half of the vegan shredded cheese, black olives, cilantro, and red onion over the burrito layer.
Repeat the layers with the remaining burrito pieces, salsa mixture, vegan shredded cheese, black olives, cilantro, and red onion.
Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving.
Serve the vegan burrito casserole with a side salad or your favorite toppings.
