
Vegan Burrito Bowl
A delicious and safe way to repurpose expired frozen vegan burritos into a flavorful burrito bowl.
Ingredients
- 2 expired frozen vegan burritos
- 1 cup cooked quinoa
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- Lime wedges, for serving
- Salt and pepper, to taste
Instructions
Preheat the oven to 350°F (175°C).
Remove the expired frozen vegan burritos from their packaging and place them on a baking sheet.
Bake the burritos in the preheated oven for 20-25 minutes, or until heated through.
Meanwhile, prepare the toppings. In a mixing bowl, combine cooked quinoa, black beans, corn kernels, diced tomatoes, red onion, and cilantro. Season with salt and pepper to taste.
Once the burritos are heated, remove them from the oven and let them cool slightly.
Cut the baked burritos into bite-sized pieces.
Divide the quinoa mixture into bowls and top with the baked burrito pieces.
Garnish with avocado slices and serve with lime wedges.
