
Frozen Chicken Soup

Ingredients
- 4 cups frozen chicken, unopened (past expiration date but still safe to consume)
- 6 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Thaw the frozen chicken in the refrigerator overnight.
- In a large pot, combine the thawed chicken, chicken broth, onion, carrots, celery, garlic, dried thyme, and bay leaf.
- Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for 1 hour, or until the chicken is cooked through and tender.
- Remove the chicken from the pot and shred it using two forks. Discard any bones or skin.
- Return the shredded chicken to the pot and season the soup with salt and pepper to taste.
- Simmer for an additional 10 minutes to allow the flavors to meld together.
- Remove the bay leaf before serving.
- Garnish with fresh parsley and serve hot.
