
Beef and Vegetable Stir-Fry
A delicious stir-fry recipe that uses expired but safe gravy beef and reduces food waste.

Ingredients
- 500g expired gravy beef, thinly sliced
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- ¼ cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1 cup beef broth
- 2 cups cooked rice, for serving
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced beef and stir-fry for 2-3 minutes until browned. Remove from the skillet and set aside.
- In the same skillet, add the onion, garlic, bell pepper, carrot, and broccoli. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, and beef broth.
- Return the beef to the skillet and pour the sauce mixture over the beef and vegetables.
- Cook for an additional 2-3 minutes until the sauce thickens and coats the beef and vegetables.
- Serve the beef and vegetable stir-fry over cooked rice.
