A refreshing salad recipe that uses slightly expired biltong dried cured meat to reduce food waste. The biltong is safe to consume as it is within 180 days after the expiry date.

Ingredients
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced olives
- 1 cup sliced slightly expired biltong dried cured meat
Instructions
- In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Add the sliced slightly expired biltong dried cured meat to the bowl.
- Toss the salad gently to combine all the ingredients.
- Serve immediately and enjoy!
