
Chicken and Vegetable Soup

Ingredients
- 1 lb frozen chicken, thawed and diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat some oil over medium heat.
- Add the chopped onion, sliced carrots, and diced celery. Cook until the vegetables are softened, about 5 minutes.
- Add the diced chicken and cook until browned on all sides.
- Pour in the chicken broth, dried thyme, bay leaf, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 20-25 minutes until the chicken is cooked through and the flavors are well combined.
- Remove the bay leaf and discard.
- Serve the chicken and vegetable soup hot, garnished with fresh parsley.
