Ingredients

  • 1 lb frozen chicken, thawed and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

In a large pot, heat some oil over medium heat.

Add the chopped onion, sliced carrots, and diced celery. Cook until the vegetables are softened, about 5 minutes.

Add the diced chicken and cook until browned on all sides.

Pour in the chicken broth, dried thyme, bay leaf, salt, and pepper.

Bring the soup to a boil, then reduce the heat and let it simmer for about 20-25 minutes until the chicken is cooked through and the flavors are well combined.
