
Frozen Chicken Soup
A comforting chicken soup recipe that utilizes frozen chicken past its expiration date to minimize food waste.
Ingredients
- 4 cups frozen chicken, unopened (past expiration date but still safe to consume)
- 6 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
Thaw the frozen chicken in the refrigerator overnight.
In a large pot, combine the thawed chicken, chicken broth, onion, carrots, celery, garlic, dried thyme, and bay leaf.
Bring the mixture to a boil over medium heat.
Once boiling, reduce the heat to low, cover, and simmer for 1 hour, or until the chicken is cooked through and tender.
Remove the chicken from the pot and shred it using two forks. Discard any bones or skin.
Return the shredded chicken to the pot and season the soup with salt and pepper to taste.
Simmer for an additional 10 minutes to allow the flavors to meld together.
Remove the bay leaf before serving.
Garnish with fresh parsley and serve hot.
