Ingredients

  • 4 cups frozen chicken, unopened (past expiration date but still safe to consume)
  • 6 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

Thaw the frozen chicken in the refrigerator overnight.

In a large pot, combine the thawed chicken, chicken broth, onion, carrots, celery, garlic, dried thyme, and bay leaf.

Bring the mixture to a boil over medium heat.

Once boiling, reduce the heat to low, cover, and simmer for 1 hour, or until the chicken is cooked through and tender.

Remove the chicken from the pot and shred it using two forks. Discard any bones or skin.
