
Cauliflower Fried Rice
A delicious and nutritious fried rice recipe using expired but safe-to-consume frozen cauliflower rice.

Ingredients
- 2 cups expired frozen cauliflower rice
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1/2 cup frozen peas
- 2 eggs, lightly beaten
- 2 tablespoons low-sodium soy sauce
- 1/2 teaspoon sesame oil
- 1/4 teaspoon black pepper
- 1 green onion, sliced (for garnish)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the onion, garlic, carrot, and peas. Cook until the vegetables are slightly tender, about 5 minutes.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add the expired frozen cauliflower rice to the skillet and stir-fry for 3-4 minutes, or until heated through.
- Stir in the soy sauce, sesame oil, and black pepper. Cook for an additional 2 minutes, stirring constantly.
- Remove from heat and garnish with sliced green onions.
- Serve hot and enjoy!
