Ingredients

  • 2 cups expired frozen cauliflower rice
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 eggs, lightly beaten
  • 2 tablespoons low-sodium soy sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 green onion, sliced (for garnish)

Instructions

Heat the vegetable oil in a large skillet or wok over medium heat.

Add the onion, garlic, carrot, and peas. Cook until the vegetables are slightly tender, about 5 minutes.

Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.

Add the expired frozen cauliflower rice to the skillet and stir-fry for 3-4 minutes, or until heated through.

Stir in the soy sauce, sesame oil, and black pepper. Cook for an additional 2 minutes, stirring constantly.

Remove from heat and garnish with sliced green onions.
