Ingredients

  • 2 cups frozen cauliflower rice
  • 1 cup cooked quinoa
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, combine the frozen cauliflower rice, cooked quinoa, bell peppers, onions, shredded cheddar cheese, sour cream, chopped parsley, garlic powder, paprika, salt, and pepper. Mix well.

Transfer the mixture to a greased casserole dish.

Bake in the preheated oven for 30-35 minutes or until the casserole is bubbling and the cheese is melted and golden.
