
Lemon Herb Couscous Salad

Ingredients
- 2 cups slightly expired couscous
- 2 cups vegetable broth
- 1 lemon, juiced
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh herbs (such as parsley, mint, or basil)
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring the vegetable broth to a boil.
- Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes, or until the couscous has absorbed all the liquid.
- Fluff the couscous with a fork and transfer it to a large mixing bowl.
- In a small bowl, whisk together the lemon juice, olive oil, chopped herbs, salt, and pepper.
- Pour the dressing over the couscous and toss to combine.
- Add the diced cucumber, bell pepper, and sliced red onion to the couscous mixture.
- Gently toss everything together until well combined.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled and enjoy!
