Ingredients

  • 2 cups slightly expired couscous
  • 2 cups vegetable broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh herbs (such as parsley, mint, or basil)
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes, or until the couscous has absorbed all the liquid.
  3. Fluff the couscous with a fork and transfer it to a large mixing bowl.
  4. In a small bowl, whisk together the lemon juice, olive oil, chopped herbs, salt, and pepper.
  5. Pour the dressing over the couscous and toss to combine.
  6. Add the diced cucumber, bell pepper, and sliced red onion to the couscous mixture.
  7. Gently toss everything together until well combined.
  8. Refrigerate for at least 30 minutes to allow the flavors to meld.
  9. Serve chilled and enjoy!
