Ingredients

  • 2 cups slightly expired couscous
  • 2 cups vegetable broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh herbs (such as parsley, mint, or basil)
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • Salt and pepper to taste

Instructions

In a medium saucepan, bring the vegetable broth to a boil.

Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes, or until the couscous has absorbed all the liquid.

Fluff the couscous with a fork and transfer it to a large mixing bowl.

In a small bowl, whisk together the lemon juice, olive oil, chopped herbs, salt, and pepper.

Pour the dressing over the couscous and toss to combine.
