
Chestnut Soup
A comforting soup made with slightly expired chestnuts.

Ingredients
- 1 lb slightly expired chestnuts
- 1 onion
- 2 cloves garlic
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt
- Black pepper
Instructions
- Peel and roughly chop the chestnuts.
- Chop the onion and mince the garlic.
- In a large pot, sauté the onion and garlic until translucent.
- Add the chestnuts and vegetable broth to the pot and bring to a boil.
- Reduce heat and simmer for 30 minutes, or until the chestnuts are tender.
- Remove from heat and let it cool slightly.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the coconut milk.
- Season with salt and black pepper to taste.
- Reheat the soup over low heat until warmed through.
- Serve hot and enjoy!
