Ingredients
- 1 lb slightly expired chestnuts
- 1 onion
- 2 cloves garlic
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt
- Black pepper

Instructions

Peel and roughly chop the chestnuts.

Chop the onion and mince the garlic.

In a large pot, sauté the onion and garlic until translucent.

Add the chestnuts and vegetable broth to the pot and bring to a boil.

Reduce heat and simmer for 30 minutes, or until the chestnuts are tender.

Remove from heat and let it cool slightly.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk.

Season with salt and black pepper to taste.
