Ingredients

  • 2 cups diced calabash
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1/4 cup chopped onions
  • 1/4 cup chopped cilantro
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Oil for frying

Instructions

  1. In a large bowl, combine diced calabash, flour, milk, onions, cilantro, baking powder, salt, and black pepper.
  2. Mix well until all ingredients are combined.
  3. Heat oil in a deep pan over medium heat.
  4. Drop spoonfuls of the calabash batter into the hot oil.
  5. Fry until golden brown and crispy, turning occasionally.
  6. Remove the fritters from the oil and drain on a paper towel.
  7. Serve hot with your favorite dipping sauce.
