
Vegetable Fried Rice
A delicious and nutritious fried rice recipe that uses expired brown rice to reduce food waste. All ingredients are cooked thoroughly to ensure food safety.

Ingredients
- 2 cups expired brown rice (cooked)
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add diced onion and minced garlic to the skillet and sauté until fragrant.
- Add mixed vegetables to the skillet and cook until tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
- Add the cooked brown rice to the skillet and mix well with the vegetables and eggs.
- Pour soy sauce and sesame oil over the rice mixture, and season with salt and pepper to taste. Stir until everything is well combined and heated through.
- Serve hot and enjoy!
