- 2 bell peppers
- 1 cup slightly expired brown rice
- 1/2 cup diced onion
- 1/2 cup diced tomatoes
- 1/2 cup diced zucchini
- 1/4 cup corn kernels
- 1/4 cup black beans
- 1/4 cup shredded cheese
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes.

In a bowl, mix together the brown rice, diced onion, diced tomatoes, diced zucchini, corn kernels, black beans, shredded cheese, cumin, paprika, salt, and pepper.

Stuff the bell peppers with the mixture and place them in a baking dish.
