Ingredients
- 1 cup expired peanut butter (still safe to consume)
- 1 cup old-fashioned oats
- 1/2 cup honey
- 1/2 cup mini chocolate chips
- 1/4 cup ground flaxseed
- 1/4 cup shredded coconut
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine the expired peanut butter, oats, honey, chocolate chips, ground flaxseed, shredded coconut, and vanilla extract.
- Mix well until all the ingredients are evenly combined.
- Using your hands, shape the mixture into small balls, about 1-inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to allow the balls to firm up.
- Store the peanut butter energy balls in an airtight container in the refrigerator for up to one week.
