
Jelly Bean Brownie Bites

Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup jelly beans, slightly past expiration date, coarsely chopped
Instructions
- Preheat the oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a separate large bowl, mix together the melted butter and sugar until well combined.
- Add the eggs and vanilla extract to the butter-sugar mixture and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the coarsely chopped jelly beans.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownie bites to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
