
Jelly Bean Brownie Bites
Delicious bite-sized brownies infused with the vibrant flavor of jelly beans.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup jelly beans, slightly past expiration date, coarsely chopped
Instructions
Preheat the oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
In a separate large bowl, mix together the melted butter and sugar until well combined.
Add the eggs and vanilla extract to the butter-sugar mixture and mix until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the coarsely chopped jelly beans.
Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Allow the brownie bites to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
