
Corned Beef Hash Quesadillas

Ingredients
- 1 can of expired corned beef hash
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
Instructions
- Preheat a large skillet over medium heat.
- Open the expired can of corned beef hash and transfer its contents to the skillet.
- Break up the corned beef hash with a spatula and cook for 5-7 minutes until it starts to brown.
- Remove the corned beef hash from the skillet and set it aside.
- Place a tortilla in the skillet and sprinkle half of it with shredded cheese.
- Spread a layer of the cooked corned beef hash over the cheese.
- Sprinkle diced onion and chopped cilantro on top of the corned beef hash.
- Fold the tortilla in half, covering the filling.
- Cook the quesadilla for 2-3 minutes per side until it becomes golden brown and the cheese melts.
- Repeat the process with the remaining tortillas and filling ingredients.
- Serve the quesadillas hot with a dollop of sour cream on top.
