
Corned Beef Hash Quesadillas
A delicious and easy recipe that repurposes expired corned beef hash into flavorful quesadillas.
Ingredients
- 1 can of expired corned beef hash
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
Instructions
Preheat a large skillet over medium heat.
Open the expired can of corned beef hash and transfer its contents to the skillet.
Break up the corned beef hash with a spatula and cook for 5-7 minutes until it starts to brown.
Remove the corned beef hash from the skillet and set it aside.
Place a tortilla in the skillet and sprinkle half of it with shredded cheese.
Spread a layer of the cooked corned beef hash over the cheese.
Sprinkle diced onion and chopped cilantro on top of the corned beef hash.
Fold the tortilla in half, covering the filling.
Cook the quesadilla for 2-3 minutes per side until it becomes golden brown and the cheese melts.
Repeat the process with the remaining tortillas and filling ingredients.
Serve the quesadillas hot with a dollop of sour cream on top.
