Ingredients
- 2 cans of expired but still safe canned lima beans
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh parsley
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the canned lima beans under cold water and drain well.
- In a large bowl, combine the lima beans, diced red bell pepper, chopped red onion, and fresh parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the lima bean mixture and toss gently to coat.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled and enjoy!
