
Corned Beef Hash Casserole
A comforting casserole dish made with commercially canned unopened corned beef hash.
Ingredients
- 2 cans of commercially canned unopened corned beef hash
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can of diced tomatoes
- 1 cup of frozen peas
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- Salt and pepper to taste
- 4 cups of cooked rice
- 1 cup of shredded cheddar cheese
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat some oil over medium heat and sauté the onion and garlic until softened.
Add the red and green bell peppers and cook until they start to soften.
Stir in the corned beef hash, diced tomatoes, frozen peas, dried thyme, paprika, salt, and pepper. Cook for about 5 minutes until everything is well combined and heated through.
In a greased casserole dish, spread half of the cooked rice on the bottom.
Top the rice with the corned beef hash mixture, spreading it evenly.
Cover the corned beef hash mixture with the remaining cooked rice.
Sprinkle the shredded cheddar cheese over the top.
Bake in the preheated oven for about 25-30 minutes, until the cheese is melted and bubbly.
