
Candied Fruit Bread Pudding
A delicious bread pudding that makes use of expired candied mixed fruit. The bread and custard mixture will be thoroughly cooked to ensure food safety.

Ingredients
- 4 cups stale bread, cubed
- 1 1/2 cups milk
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup expired candied mixed fruit
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, combine the bread cubes and expired candied mixed fruit.
- In another bowl, whisk together the milk, sugar, eggs, vanilla extract, cinnamon, and nutmeg.
- Pour the custard mixture over the bread and fruit mixture. Stir gently to combine and let it sit for 15 minutes.
- Transfer the mixture to the greased baking dish and spread it evenly.
- Bake for 40-45 minutes or until the pudding is set and golden brown on top.
- Remove from the oven and let it cool slightly before serving.
- Serve warm or at room temperature.
