
Beaufort Cheese and Vegetable Gratin
A hearty and comforting vegetable gratin made with Beaufort Cheese Opened.

Ingredients
- 2 cups Beaufort Cheese Opened
- 2 cups mixed vegetables (e.g. broccoli, cauliflower, carrots)
- 1 cup heavy cream
- 1/2 cup breadcrumbs
- 2 tablespoons butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 375°F (190°C).
- 2. Steam the mixed vegetables until slightly tender.
- 3. In a saucepan, melt the butter over medium heat. Stir in the breadcrumbs and cook until golden brown. Set aside.
- 4. In a separate saucepan, heat the heavy cream over low heat. Add the Beaufort Cheese Opened and stir until melted and smooth.
- 5. Season the cheese mixture with dried thyme, salt, and pepper.
- 6. In a baking dish, arrange the steamed vegetables. Pour the cheese mixture over the vegetables.
- 7. Sprinkle the breadcrumb mixture evenly over the top.
- 8. Bake in the preheated oven for 25-30 minutes, or until the gratin is bubbly and the top is golden brown.
- 9. Serve hot as a main dish or a side dish.
