Ingredients

  • 1 sheet of puff pastry
  • 200g Beaufort Cheese, opened but still safe to consume
  • 2 tomatoes, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper to taste

Instructions

Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheet and place it on a baking sheet.

Prick the pastry with a fork to prevent it from puffing up.

Sprinkle half of the Beaufort Cheese over the pastry.

Arrange the tomato slices on top of the cheese.

Drizzle the olive oil over the tomatoes and season with salt, pepper, and fresh basil.

Sprinkle the remaining Beaufort Cheese over the tomatoes.
