
Robiola Tre Latti Frittata

Ingredients
- 6 eggs
- 100g Robiola Tre Latti cheese, slightly expired
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 1 zucchini, sliced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 180°C (350°F).
- In a large bowl, whisk the eggs and season with salt and pepper.
- Heat olive oil in a non-stick skillet over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced red bell pepper and sliced zucchini to the skillet. Cook for 5 minutes or until tender.
- Crumble the slightly expired Robiola Tre Latti cheese over the vegetables in the skillet.
- Pour the beaten eggs over the vegetables and cheese. Stir gently to distribute the ingredients evenly.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the frittata is set and golden on top.
- Remove from the oven and let it cool for a few minutes.
- Cut into wedges and serve warm.
