
Robiola Tre Latti Frittata
A fluffy and savory frittata made with slightly expired Robiola Tre Latti cheese.
Ingredients
- 6 eggs
- 100g Robiola Tre Latti cheese, slightly expired
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 1 zucchini, sliced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
Preheat the oven to 180°C (350°F).
In a large bowl, whisk the eggs and season with salt and pepper.
Heat olive oil in a non-stick skillet over medium heat.
Add the chopped onion and sauté until translucent.
Add the diced red bell pepper and sliced zucchini to the skillet. Cook for 5 minutes or until tender.
Crumble the slightly expired Robiola Tre Latti cheese over the vegetables in the skillet.
Pour the beaten eggs over the vegetables and cheese. Stir gently to distribute the ingredients evenly.
Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the frittata is set and golden on top.
Remove from the oven and let it cool for a few minutes.
Cut into wedges and serve warm.
