Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 egg
- 2 tablespoons unsalted butter, melted
- 1/2 cup popcorn unpopped kernels, ground into a fine powder
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, egg, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the ground popcorn kernels.
- Heat a non-stick skillet over medium heat.
- Scoop 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes.
- Serve hot with your favorite toppings.
