
Melba Toast Bruschetta

Ingredients
- 1 package of expired Melba Toast
- 2 ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves of garlic, minced
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Place the expired Melba Toast on a baking sheet and toast in the oven for 5-7 minutes until crisp.
- In a bowl, combine the diced tomatoes, basil, minced garlic, olive oil, salt, and pepper. Mix well to combine.
- Once the Melba Toast is toasted, remove from the oven and let it cool slightly.
- Top each Melba Toast with a spoonful of the tomato mixture.
- Serve immediately and enjoy!
