
Melba Toast Crusted Chicken
A crispy and flavorful chicken recipe using slightly expired Melba Toast.
Ingredients
- 4 chicken breasts
- 1 cup crushed Melba Toast
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 2 tbsp olive oil
Instructions
Preheat the oven to 400°F (200°C).
In a shallow bowl, mix together the crushed Melba Toast, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
Dip each chicken breast into the beaten eggs, then coat it with the Melba Toast mixture, pressing gently to adhere.
Heat olive oil in an oven-safe skillet over medium-high heat. Add the coated chicken breasts and cook for 3-4 minutes on each side, until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the crust is crispy.
Remove from the oven and let the chicken rest for a few minutes before serving.
