
Lemongrass Coconut Soup

Ingredients
- 2 stalks of lemongrass
- 1 can of coconut milk
- 2 cups of vegetable broth
- 1 onion
- 2 cloves of garlic
- 1 thumb-sized piece of ginger
- 1 red chili
- 2 carrots
- 1 cup of mushrooms
- 1 cup of spinach
- 1 lime
- Salt and pepper to taste
Instructions
- 1. Peel the tough outer layers of the lemongrass stalks and cut them into small pieces.
- 2. In a large pot, heat some oil over medium heat and sauté the chopped onion, garlic, ginger, and red chili until fragrant.
- 3. Add the lemongrass pieces and continue to cook for a few minutes.
- 4. Pour in the vegetable broth and coconut milk. Bring the soup to a boil and then reduce the heat to simmer for about 20 minutes.
- 5. While the soup is simmering, peel and slice the carrots into thin rounds, and slice the mushrooms.
- 6. After 20 minutes, add the carrots and mushrooms to the soup and cook for another 10 minutes or until the vegetables are tender.
- 7. Stir in the spinach and squeeze the juice of one lime into the soup. Season with salt and pepper to taste.
- 8. Serve hot and enjoy this comforting lemongrass coconut soup!
