
Ginger Carrot Soup

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon grated expired ginger root
- 4 carrots, peeled and chopped
- 4 cups vegetable broth
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and cook until softened.
- Stir in the grated expired ginger root and cook for another minute.
- Add the chopped carrots and vegetable broth to the pot.
- Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the carrots are tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
