Ingredients

  • 2 stalks of lemongrass
  • 1 can of coconut milk
  • 2 cups of vegetable broth
  • 1 onion
  • 2 cloves of garlic
  • 1 thumb-sized piece of ginger
  • 1 red chili
  • 2 carrots
  • 1 cup of mushrooms
  • 1 cup of spinach
  • 1 lime
  • Salt and pepper to taste

Instructions

1. Peel the tough outer layers of the lemongrass stalks and cut them into small pieces.

2. In a large pot, heat some oil over medium heat and sauté the chopped onion, garlic, ginger, and red chili until fragrant.

3. Add the lemongrass pieces and continue to cook for a few minutes.

4. Pour in the vegetable broth and coconut milk. Bring the soup to a boil and then reduce the heat to simmer for about 20 minutes.

5. While the soup is simmering, peel and slice the carrots into thin rounds, and slice the mushrooms.

6. After 20 minutes, add the carrots and mushrooms to the soup and cook for another 10 minutes or until the vegetables are tender.

7. Stir in the spinach and squeeze the juice of one lime into the soup. Season with salt and pepper to taste.
