Ingredients
- 2 cups ripe tomatoes, diced
- 1 cup expired feta cheese crumbles
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the tomatoes, feta cheese crumbles, red onion, olives, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the salad and toss gently to coat all the ingredients.
- Let the salad sit for 10-15 minutes to allow the flavors to meld together.
- Serve chilled and enjoy!
