Ingredients
- 2 cups expired Duck Confit, shredded
- 4 cups arugula
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled goat cheese
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the arugula, cherry tomatoes, red onion, and crumbled goat cheese.
- In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the dressing.
