
Spaghetti with Bottarga and Lemon
A simple and flavorful pasta dish that makes the most of expired Bottarga while ensuring food safety.

Ingredients
- 200g spaghetti
- 50g expired Bottarga, grated
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- Zest of 1 lemon
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant.
- Add the grated Bottarga to the skillet and cook for another 2 minutes, stirring occasionally.
- Add the cooked spaghetti to the skillet along with the lemon zest and juice. Toss well to coat the pasta with the Bottarga mixture.
- Season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through.
- Serve the spaghetti with Bottarga and lemon garnished with fresh parsley.
