Ingredients
- 4 slices of baguette or crusty bread
- 50g expired Bottarga, thinly sliced
- 2 ripe tomatoes, diced
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, halved
- Salt and pepper to taste
- Fresh basil leaves, for garnish

Instructions

Preheat the oven to 375°F (190°C).

Place the bread slices on a baking sheet and toast in the oven for 5-7 minutes until crisp.

Rub the halved garlic clove on one side of each bread slice.

In a bowl, combine the diced tomatoes, extra virgin olive oil, salt, and pepper. Mix well.

Top each garlic-rubbed bread slice with Bottarga slices.

Spoon the tomato mixture over the Bottarga slices, dividing evenly.

Place the bruschetta back in the oven for 2-3 minutes until the Bottarga is warmed through.

Garnish with fresh basil leaves and serve immediately.
